Southwest Tofu Breakfast Bowl

This high in protein and vegan-friendly breakfast bowl is perfect for a quick and flavorful start to your day. Tofu, seasoned with smokey spices like cumin and paprika, pairs perfectly with black beans and creamy avocado for a nutrient-dense meal that’s packed with protein and healthy fats. Add quinoa or brown rice for extra heartiness, or keep it simple with just the beans and tofu. Topped with a fresh salsa and a squeeze of lemon, this bowl is bursting with bold flavors and vibrant colors. It’s an easy, satisfying breakfast that keeps you full and energized.

Ingredients4 servings

  • 1 (14 oz) block firm tofu, pressed and crumbled
  • 1 (14 oz) can black beans, drained and rinsed
  • 1 cup cooked quinoa or brown rice (optional for a grain base)
  • 1 avocado, sliced
  • ¼ cup salsa
  • 1 tbsp olive oil (divided)
  • ½ tsp cumin (divided)
  • ½ tsp smoked paprika or regular paprika (divided)
  • ½ tsp garlic powder
  • ½ tsp salt (divided)
  • Garnish: chopped parsley, lemon wedges

Directions

Heat ½ tbsp olive oil in a skillet over medium heat. Add crumbled tofu, ¼ tsp cumin, ¼ tsp smoked paprika and ¼ tsp salt. Cook for 5-7 minutes until lightly browned and heated through. Set aside.

In the same skillet, add the remaining ½ tbsp olive oil. Add black beans, ¼ tsp cumin, ¼ tsp smoked paprika, ½ tsp garlic powder and ¼ tsp salt to taste. Add ¼ cup of water and cook for 5-8 minutes until heated through and the flavors are absorbed.

If using quinoa or brown rice, divide it among each bowl. Layer the black beans, tofu, and avocado slices evenly in each bowl. Add a generous spoonful of salsa on top. Garnish with fresh cilantro and lemon wedges, then serve warm. 

Notes:

  • Make it a fiesta with extra toppings like jalapeños, shredded cheese or corn.
  • You can omit the brown rice or quinoa and substitute it with tortillas to make tacos or mini burritos. 
  • If using quinoa or rice, prepare in advance to save time in the morning.

    This sounds delish! Savory breakfasts are my favorite. Would love 💗 to see you include more recipes that are Whole Food Plant Based (or at least vegan) as there is such a large movement towards this eating lifestyle (especially in the U.S.).
