Vanilla & Chocolate Marble Loaf

If you’re in the mood for a quick and easy treat, this classic vanilla and chocolate marble loaf is always a hit. Homemade, delicious, and made with simple ingredients – enjoy!

Ingredients6 small marbled cakes or one large marbled cake

  • 3 large eggs
  • ⅓ cup brown sugar
  • ½ cup unsweetened applesauce
  • 3 tbsp neutral oil
  • ⅓ cup unsweetened non-dairy milk
  • 1 tsp vanilla extract
  • 1 cup + 2 tbsp all-purpose flour
  • ⅓ cup almond flour
  • ½ tsp baking soda
  • 2 tbsp unsweetened cocoa powder

Directions

In a mixing bowl, whisk the eggs and brown sugar until the mixture lightens in color and doubles in volume.

Whisk in the oil, applesauce, non-dairy milk, and vanilla extract.

Add the all-purpose flour, almond flour, and baking soda. Mix just until smooth. Preheat oven to 350°F.

Divide the batter evenly into two bowls. Sift the cocoa powder into one bowl and fold gently to create the chocolate batter.

Grease 6 mini loaf pans (or one standard loaf pan). Alternate spoonfuls of vanilla and chocolate batter. Use a knife to swirl the two batters together lengthwise in a zigzag motion for a marbled effect. Bake for 15–20 minutes for mini loaves or 30–35 minutes for a full-size loaf.

Check doneness by inserting a knife or toothpick— it should come out clean. Let cool slightly before removing from the pan.

Note: Make it gluten-free by using an all purpose gluten-free flour.
