Ingredients6 small marbled cakes or one large marbled cake
- 3 large eggs
- ⅓ cup brown sugar
- ½ cup unsweetened applesauce
- 3 tbsp neutral oil
- ⅓ cup unsweetened non-dairy milk
- 1 tsp vanilla extract
- 1 cup + 2 tbsp all-purpose flour
- ⅓ cup almond flour
- ½ tsp baking soda
- 2 tbsp unsweetened cocoa powder

In a mixing bowl, whisk the eggs and brown sugar until the mixture lightens in color and doubles in volume.

Whisk in the oil, applesauce, non-dairy milk, and vanilla extract.

Add the all-purpose flour, almond flour, and baking soda. Mix just until smooth. Preheat oven to 350°F.

Divide the batter evenly into two bowls. Sift the cocoa powder into one bowl and fold gently to create the chocolate batter.

Grease 6 mini loaf pans (or one standard loaf pan). Alternate spoonfuls of vanilla and chocolate batter. Use a knife to swirl the two batters together lengthwise in a zigzag motion for a marbled effect. Bake for 15–20 minutes for mini loaves or 30–35 minutes for a full-size loaf.
