Artichoke Spinach Pesto Pizza Cauliflower Crust

Craving pizza and want a healthier option? We’ve got you! This artichoke and spinach pesto-inspired pizza is made on a cauliflower crust and loaded with flavor while also staying budget-friendly. It’s easy to make, packed with veggies, perfect for anyone looking for a lighter take on a classic favorite.

Crust

  • 6 cups frozen riced cauliflower, thawed
  • 2 oz goat cheese
  • 1 large egg
  • 1 Tbsp parmesan, grated
  • 1/4 tsp salt

Pesto

  • 1 cup baby spinach, packed
  • 1/2 lemon, juiced
  • 1 Tbsp parmesan, grated
  • 3 raw walnut halves
  • 1 garlic clove
  • 1 Tbsp olive oil

Toppings

  • 1/4 cup artichoke heart quarters, chopped
  • 1/4 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled

Directions

Make the crust: Preheat oven to 450F. Line a baking sheet with parchment paper and set aside. In a large bowl, mix the egg, goat cheese, parmesan, and salt until creamy. Place riced cauliflower in a large, clean dish towel. Gather the edges to make a pouch then squeeze as much water as possible out. Transfer to the bowl with the egg mixture and stir to combine.

Transfer the dough mixture to the prepared baking sheet and press firmly into 1/4 inch thick circle. Place in oven and bake for 20 minutes, until set.

Make the pesto: In a high speed blender or food processor, combine spinach, lemon juice, parmesan, walnuts, garlic, olive oil, and salt and pepper to taste. Pulse until creamy, stopping to scrape down sides as needed. Add 1 Tbsp of water if too thick.

Remove crust from oven and carefully flip over onto the baking pan, removing parchment paper. Spoon pesto onto crust and spread into an even layer. Top with artichoke hearts, cherry tomatoes, and feta cheese. Return to oven and bake 5-8 minutes, until cheese begins to brown. Remove from oven, slice into 4 pieces and enjoy warm.

Notes:

  • Traditional pesto uses pine nuts and basil — we’ve opted for baby spinach and walnuts to make it more accessible, but either version would be delicious.
  • Could also consider using a Yuka-friendly premade cauliflower crust!

    What could I use in place of goat cheese? There are few things I won’t eat, but that is one of them.

      If you’re not eating it because you don’t like the taste, that will probably vanish in this recipe. I have some pancake batter recipe that calls for cottage cheese, which my daughter-in-law would never eat, but once it’s in the recipe, it becomes neutral. You probably could substitute cottage cheese for the Goat cheese in this recipe too
