
If you love focaccia as much as we do, this fluffy, golden crust will be your new favorite pizza base. Topped with kale and creamy goat cheese, this pizza is elegant, and far easier than it may sound. Best of all, it’s endlessly adaptable—delicious with just about any topping you like.

Crust
- 1 cup all purpose flour
- 2 Tbsp sun-dried tomatoes, roughly chopped
- 1 tsp olive oil
- 1 Tbsp rosemary, roughly chopped
- 1 tsp instant yeast
- 1 tsp garlic powder
- 1/2 tsp salt
Toppings
- 6 oz goat cheese, crumbled
- 1 cup chopped kale, packed
- 1/4 cup tomato sauce
- 1 tsp olive oil

Make the crust: In a large bowl, combine flour, salt, instant yeast, and garlic powder. Add
1/2 cup warm water (120F-130F). Be sure to check the temperature of the water to ensure yeast activates. Stir with a wooden spoon or spatula until combined. Cover bowl tightly and transfer to refrigerator overnight, or at least 8 hours.

Preheat oven to 400F. Line an 8-9 inch cake pan with parchment paper then spread 1 tsp of olive oil on top of parchment paper. Transfer dough to prepared pan and drizzle with remaining 1 tsp of olive oil, turning to coat all sides of the dough. Use your hands to flatten and stretch dough to fit the pan. Cover with a clean towel and set in a warm draft-free place for at least 15 minutes.

After at least 15 minutes, use your fingers to poke holes in the dough. Then add sun-dried tomatoes and rosemary over top and press into dough. Transfer pan to oven and bake 12-15 minutes, until golden.

Make the pizza: Remove crust from oven and increase heat to 450F. Carefully transfer focaccia to a sheet pan. Combine kale and 1 tsp olive oil and massage into kale. Spoon tomato sauce onto pizza and spread into an even layer. Top focaccia with kale and crumbled goat cheese. Transfer to oven and cook for 5-8 minutes, until the cheese begins to brown. Remove from oven and slice into 4 pieces. Enjoy warm.

We have not tested this recipe with another flour, though it would depend on the type of flour that you wish to use. If you prefer a gluten-free alternative, it would be better to choose a recipe that is adapted to the specific flour in question!
