Baked Salmon with Veggies and Lemon Dill Sauce

With baked salmon and roasted vegetables, it’s an easy go-to for busy evenings. The Brussels sprouts pair perfectly with tender baby potatoes and protein-rich salmon. A zesty lemon-dill yogurt sauce ties everything together with a burst of freshness. This recipe delivers seasonal flavor with minimal effort.

Ingredients4 servings

  • 4 (3-4 oz) fillets of thick cut salmon
  • 2 cups brussels sprouts, trimmed and halved
  • 1 1/2 cups baby potatoes, quartered
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 4 lemon slices
  • 1/2 cup full fat unsweetened Greek yogurt
  • 1 lemon, juiced and zested
  • 2 tbsp dill, chopped

Directions

Preheat oven to 425°F. On a sheet pan, combine Brussels, potatoes, garlic, olive oil, and salt and pepper to taste. Toss to coat then spread into an even layer. Transfer to oven and cook 12 minutes.

Pat salmon filets dry and sprinkle with salt and pepper to taste. Remove pan from oven and nestle filets into vegetables. Place a lemon slices on each fillet. Transfer to oven and cook 15-18 minutes, until salmon is cooked through and vegetables are tender.

In a small bowl, combine Greek yogurt, lemon juice, lemon zest, dill, and salt and pepper to taste. Stir to combine. Remove pan from oven and serve salmon and vegetables with lemon dill sauce.

    So good and easy, and I don’t even cook “recipes ” often
    I did cook the veggies longer negué adding the salmon knowing that my salmon pieces would only take about 7 min to cook, it all came out fantastic

    We just finished having this for dinner and I was very happy with the way it turned out. I Follow the directions and put the salmon on the same pan as the vegetables. I did not find it to have the taste of the salmon integrating with the vegetables at all. It was delicious and I will definitely make it again. Very easy to make and clean up after.

    My mouth is watering! I’m going to take tzatziki and add some lemon juice to it, for the sauce. Cuz I’m lazy, and cuz tzatziki is yummy – esp the Boar’s Head brand. Hope it’s okay to mention a brand name.

    Great recipe – I use frozen sheet pan vegetables (from Costco) and Sockeye. It keeps the fish moist and the lemon dill sauce is a bonus.

    Never cook salmon with roasted vegies. The fish flavor erodes onto the veggies yuka ! Remove vegies after roasting covr with foil do not seal leave ontop stove. line small cookie sheet with tinfoil. Oven broil hi
    Coat fish with olive oil lil salt , pepper Put bttr pat thin lemon slice ontop of salmon
    Broil til edges crisp tada
