Hearty Turkey & Veggie Chili

Looking for a healthy, hearty meal to fuel your day? This easy, one-pot dish is a delicious mix of lean protein, fiber-rich veggies, and bold spices. Perfect for a cozy dinner or meal prepping for a busy week ahead!

Ingredients4 servings

  • 1 lb ground turkey (93% lean)
  • 1 1/2 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes, no salt added
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 medium yellow onion, diced
  • 1 medium bell pepper, diced
  • 1 medium sweet potato, peeled and diced into 1/2-inch cubes
  • 2 garlic cloves, minced
  • Ground cumin, smoked paprika, chili powder
  • Garnish: Greek yogurt, lime wedges, chopped cilantro

Directions

Heat 1 tbsp of olive oil in a large pot or Dutch oven over medium heat. Add the onion and garlic, then sauté until fragrant and translucent, about 3-4 minutes. Stir in the diced bell pepper and cook for another 2 minutes.

Add the ground turkey to the pot and break it apart with a wooden spoon. Cook the ground turkey until it’s browned, about 5-6 minutes.

Add the sweet potatoes, 1 tsp of cumin, 1 tsp of smoked paprika, 1/2 tsp of chili powder and a pinch of salt. Stir to incorporate the spices.

Add the diced tomatoes, black beans and chicken broth, then stir. Bring the mixture to a boil, then reduce to low heat. Cover and simmer for 25-30 minutes until the sweet potatoes are tender.

Turn off the heat and adjust the seasonings if needed. Pour the chili into a bowl and garnish with fresh cilantro, a dollop of Greek yogurt, and a squeeze of lime, if desired.

Notes:

  • Make sure that you dice the sweet potatoes evenly so that they finish cooking at the same time. 
  • Can also add a dash of ground cinnamon and cayenne pepper for more warmth.
  • Store in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
  • Feel free to add more veggies like diced zucchini or carrots for a heartier chili.

    loved the chili! I used lentils (had them on hand) instead of black beans and added another half cup of broth to make it a tad soupier. I was hardy! Thank you! I am gluten free and dairy free. The recipe is a keeper!

    What other spice could I use besides cumin? It’s not a spice that I care for or could I just omit the cumin altogether?

      You can omit the cumin! If you would like, you can add more smoked paprika in its place, or consider adding ground coriander or fennel! Alternately, you can add ground cinnamon and cayenne pepper.

        There is no such word as sposta. There is a word “suppose” as in, you are suppose to make the recipe first and then review it. Check Webster’s dictionary and you will find the word yum.
