Cozy White Bean Chili

This cauliflower and white bean chili is a hearty, plant-based twist on classic chili that’s packed with flavor and nutrient-dense ingredients. This dish offers a flavorful way to load up on veggies for dinner!

Ingredients4 servings

  • 2 – 2 ½ cups low-sodium vegetable broth
  • 2 cups cauliflower florets, finely chopped or grated
  • 1 cup frozen peas or corn
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chiles, keeping the liquid
  • 2 celery stalks, diced
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp tomato paste
  • Smoked paprika, ground cumin, chili powder, thyme, nutritional yeast
  • Garnish: cilantro, diced avocado and pumpkin seeds

Heat 1 tbsp of olive oil in a large pot over medium heat. Add the onion and celery, and sauté until softened, about 5 minutes. Stir in the garlic and cook for another minute until fragrant.

Stir in the tomato paste and cook for 1-2 minutes until it deepens in color. Add the cauliflower and cook for another 3-4 minutes to slightly soften.

Add the white beans, vegetable broth, green chiles, 1 tbsp of nutritional yeast (if desired), 1 tsp of smoked paprika, 1 tsp of cumin, 1/2 tsp of chili powder, 1 tsp of thyme, and a pinch of salt. Stir to combine, bring to a gentle boil, then reduce heat to low.

Simmer for 15-20 minutes, allowing the flavors to meld and the vegetables to cook through. During the last 5 minutes of cooking, stir in the frozen peas or corn. Taste and adjust seasonings if needed.

Ladle the chili into a bowl and garnish with chopped cilantro, diced avocado and pumpkin seeds.

Notes:

  • Pro tip: use a box grater or food processor to finely grate the cauliflower.
  • Also delicious with additional diced vegetables such as squash, pumpkin or sweet potatoes.

    I was somewhat disappointed. It was a little bland to me. Also it needed something with it – rice or couscous. If I were to make it again, I probably increase the amount of spices.

    Surprised “organic or no salt added” canned white beans not recommended. Canned legumes and vegetables are usually salty.
