This cauliflower and white bean chili is a hearty, plant-based twist on classic chili that’s packed with flavor and nutrient-dense ingredients. This dish offers a flavorful way to load up on veggies for dinner!
Ingredients4 servings
- 2 – 2 ½ cups low-sodium vegetable broth
- 2 cups cauliflower florets, finely chopped or grated
- 1 cup frozen peas or corn
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chiles, keeping the liquid
- 2 celery stalks, diced
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 1 tbsp tomato paste
- Smoked paprika, ground cumin, chili powder, thyme, nutritional yeast
- Garnish: cilantro, diced avocado and pumpkin seeds
Directions

1
Heat 1 tbsp of olive oil in a large pot over medium heat. Add the onion and celery, and sauté until softened, about 5 minutes. Stir in the garlic and cook for another minute until fragrant.

2
Stir in the tomato paste and cook for 1-2 minutes until it deepens in color. Add the cauliflower and cook for another 3-4 minutes to slightly soften.

3
Add the white beans, vegetable broth, green chiles, 1 tbsp of nutritional yeast (if desired), 1 tsp of smoked paprika, 1 tsp of cumin, 1/2 tsp of chili powder, 1 tsp of thyme, and a pinch of salt. Stir to combine, bring to a gentle boil, then reduce heat to low.

4
Simmer for 15-20 minutes, allowing the flavors to meld and the vegetables to cook through. During the last 5 minutes of cooking, stir in the frozen peas or corn. Taste and adjust seasonings if needed.

5
Ladle the chili into a bowl and garnish with chopped cilantro, diced avocado and pumpkin seeds.
Notes:
- Pro tip: use a box grater or food processor to finely grate the cauliflower.
- Also delicious with additional diced vegetables such as squash, pumpkin or sweet potatoes.
Happy cooking 🥰 ☀️
This was easy to make and so delicious! A new favorite for my family.
Thank you Yuka for the great recipe I was pleased how all the flavors mingled together, it is a delicious meal 😍
Thanks!
Looks great recipes!
I was somewhat disappointed. It was a little bland to me. Also it needed something with it – rice or couscous. If I were to make it again, I probably increase the amount of spices.

Easy to make and very tasty
Hello, I made this last evening and it was delicious. The only change I made was to use a bag of organic riced cauliflower instead of fresh. By any chance would you be able to post the Nutrition Facts with the recipe? Thank you!
Thanks for recipe 🫶🏻

Wow, it sounds very good. Would love to try the recipe however I need the email.
What about a can of Ro-tel tomatoes skipping the green chili can n tomato paste?
Yum! Rotel is good in anything!! I’m going to try that!
You could absolutely make this modification, that sounds equally delicious! We’d love to hear how it tastes!
Making the Cozy White Bean Chili for tonight. Can’t wait to taste it!
Surprised “organic or no salt added” canned white beans not recommended. Canned legumes and vegetables are usually salty.
It would be nice to know the macronutrient content per serving.
I love the this. Easy step by step.
Will love to try that
Looks like something I may try.

Julie, receipts look yummy, but will stick to old fashion Chile
This looks like a good healthy recipe. I might substitute some of the items with fresh ingredients. However for the most part I feel it’s it’s good.
