Golden Cauliflower “Fried Rice”

Get ready to dive into a dish that’s as vibrant as it is nutritious! Our Golden Cauliflower “Fried Rice” is a feast for your taste buds. As a quick and delicious rendition of the classic fried rice, this version offers the opportunity to add more tasty veggies into your evening meal 🥕

Ingredients4 servings

  • 1 head of cauliflower, grated or finely chopped, approximately 2 ½ cups
  • 1 small onion, finely chopped
  • 1 cup carrots, diced (1 large carrot)
  • 1 small bell pepper, diced
  • 2 cloves garlic, minced
  • 3 large eggs, lightly beaten
  • ½ cup thawed sweet green peas
  • 1 TBSP olive oil
  • 1 tsp turmeric powder
  • A pinch of black pepper
  • Garnish: sliced green onion and sesame seeds

Directions:

Grate the cauliflower using a box grater or food processor until it resembles rice. You can also chop it using a knife. Set aside. Prepare the onion, carrot, bell pepper, garlic and peas.

Heat the olive oil in a large skillet over medium heat. Add the chopped onion, carrots, bell pepper and garlic. Sauté for about 5 minutes until the vegetables are tender.

Beat the eggs. Push the vegetables to one side of the skillet. Pour the beaten eggs into the empty side and scramble until fully cooked. Mix in the peas, cauliflower, turmeric and black pepper, stirring well to combine. Cook for an additional 5-7 minutes until the cauliflower is tender.

Season with salt and pepper to taste. Garnish with fresh green onions and sesame seeds. Serve hot.

Notes:

  • You can also grate the carrots if you have trouble dicing it. 
  • Pre-thawed frozen cauliflower rice works too.
  • This recipe is a nutritious powerhouse. Try not to omit the black pepper as it helps activate the anti-inflammatory properties found in turmeric. 
  • Jazz things up with additional veggies such as broccoli or snap peas.

    Good taste but definitely needed salt. I used pink salt. Next time I’ll use 4 eggs for the extra protein since the yield is 4 servings – generous servings at that. FYI – My medium organic cauliflower head grated yielded 7 cups so I will use the remainder for another recipe (I used 3 1/2 cups of grated cauliflower since I had so much extra.)

    YES!! Combining black pepper with turmeric is fabulous in combating inflammatory joints!! I make this recipe quite often and call it “Egg Roll in a Bowl” – LOL!!! Sometimes I substitute the cauliflower for shredded cabbage – still delicious!! And – you can even use Egg Life Wraps to make a faux Egg Roll – just crisp it up in the air fryer. Use sugar-free or homemade salad dressing as a “sauce” for dipping and you’ve got a delicious meal!! YUMMY!!!
