Apple Pie Chia Parfait

This Chia Parfait is a sweet and nutritious way to enjoy a high-protein breakfast. The creamy chia pudding, made with almond milk and fragrant spices including cinnamon and nutmeg, pairs perfectly with layers of tangy Greek yogurt and spiced apples. With a flavor reminiscent of apple pie, the sautéed apples bring a touch of indulgence, while the chia seeds and yogurt keep things light and packed with protein. In just 10 minutes of prep time, you’ll have a parfait that feels like a treat but is filled with wholesome ingredients to fuel your day.

Ingredients4 servings

  • 2 cups plain Greek yogurt
  • 2 medium apples, peeled and diced
  • 1 ½ cups almond milk (or milk of your choice)
  • 1 tbsp maple syrup (or honey)
  • ½ cup chia seeds
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground ginger (optional)
  • 1 tsp lemon juice
  • Garnish: crushed walnuts or pecans, cinnamon 

Directions

In a bowl, mix together the chia seeds, almond milk, vanilla extract, cinnamon, nutmeg, and ginger (if desired). Stir well until fully combined. Cover and refrigerate for at least 4 hours, or overnight, to allow the chia seeds to thicken.

In a saucepan, combine diced apples, maple syrup, lemon juice, and 1 tbsp of water. Cook over medium heat for 5-7 minutes until the apples soften and become slightly caramelized. Remove from heat and let cool.

Give the chia pudding a quick stir to loosen, then assemble the parfaits in small glasses or bowls as follows. Start with 2 tbsp of chia pudding, then a layer of Greek yogurt.

Spoon over some of the spiced apples and repeat these layers until the glass or bowl is filled. Garnish with a pinch of cinnamon and crushed walnuts or pecans.

Notes:

  • Opt for crisp apples such as Honeycrisp, Fuji, or Granny Smith for the spiced apple layer. These hold up well during cooking and provide a nice balance of sweetness and tartness. 
  • Short on time in the morning? You can also make the spiced apple mixture the night before, along with the chia pudding base.

      To print them you can simply right click on the page and click on “print”. Alternately, you can copy the portions which you would like to print, and then paste it onto a blank document such as Word, or another similar file.

      Many of the recipes have suggestions for milk alternatives! In this recipe, you can use a dairy-free yogurt as well!

    Looks good! For those who try to avoid excess sugar, try apple juice instead of water as your liquid, you can then reduce or eliminate the sweetener.
