- 2 cups plain Greek yogurt
- 2 medium apples, peeled and diced
- 1 ½ cups almond milk (or milk of your choice)
- 1 tbsp maple syrup (or honey)
- ½ cup chia seeds
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground ginger (optional)
- 1 tsp lemon juice
- Garnish: crushed walnuts or pecans, cinnamon

In a bowl, mix together the chia seeds, almond milk, vanilla extract, cinnamon, nutmeg, and ginger (if desired). Stir well until fully combined. Cover and refrigerate for at least 4 hours, or overnight, to allow the chia seeds to thicken.

In a saucepan, combine diced apples, maple syrup, lemon juice, and 1 tbsp of water. Cook over medium heat for 5-7 minutes until the apples soften and become slightly caramelized. Remove from heat and let cool.

Give the chia pudding a quick stir to loosen, then assemble the parfaits in small glasses or bowls as follows. Start with 2 tbsp of chia pudding, then a layer of Greek yogurt.

Spoon over some of the spiced apples and repeat these layers until the glass or bowl is filled. Garnish with a pinch of cinnamon and crushed walnuts or pecans.
Notes:
- Opt for crisp apples such as Honeycrisp, Fuji, or Granny Smith for the spiced apple layer. These hold up well during cooking and provide a nice balance of sweetness and tartness.
- Short on time in the morning? You can also make the spiced apple mixture the night before, along with the chia pudding base.
