
Skip the pile of dishes tonight with this one-pan Maple Roasted Sweet Potato with Chickpeas, Kale & Red Onion recipe! We’re taking nutrient-dense sweet potatoes, protein-packed chickpeas, and hearty kale and tossing them in a sweet-and-savory maple glaze. Topped it all off with a zesty herb-infused Greek yogurt sauce and enjoy!
Ingredients4 servings
- 2-3 medium sweet potatoes, peeled and cubed
- 5 to 6 stalks of kale, stems removed
- 1 red onion, sliced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup Greek yogurt
- 4 tbsp olive oil (plus extra if needed)
- 1 tbsp maple syrup
- 1 tsp sweet paprika
- 1 tsp ground cumin
- Small bunch of fresh herb of choice (parsley, cilantro, or chives)
Directions

Preheat your oven to 350°F (180°C). Peel the sweet potatoes and cut them into bite-sized cubes. Peel and thinly slice the red onion.

Remove the central stems from the kale. Wash the leaves thoroughly, pat dry, and tear them into bite-sized pieces.

In a small bowl, whisk together the olive oil, maple syrup, paprika, cumin, salt, and pepper.

On a large sheet pan, spread out the sweet potato cubes, chickpeas, and sliced red onion. Pour the oil and maple syrup mixture over them and toss until everything is evenly coated. Roast for 30 minutes.

Remove the pan from the oven and stir in the kale. Toss well to coat the leaves in the remaining oil (drizzle an extra tablespoon of oil if necessary). Roast for another 10 minutes.

While roasting, mix the Greek yogurt with the chopped fresh herbs. Season with salt and pepper, then serve with the roasted vegetables.

I had to cook potatoes, onions and chickpeas for 15 min additional then Kate on top for 10 min. I left peelings on potatoes I didn’t make the Greek dish, tasted very good as is.

This recipe is a hit. I had a preconceived idea about kale being bitter but I’m glad I used it. I don’t have a large sheet pan so I divided the recipe into two 8×8 pans and froze one since there are two of us.
To save time, I prepared the potatoes and kale the day before.
I made the recipe in a NuWave oven and the first roasting was done in less than 20” on the lowest setting. We sprayed more olive oil on the kale; the second roasting time took less than 10 minutes. The crispy kale added so much to the dish. I wish I could attach a picture.

Hi there. Well. With this recipe. The potato’s took over 45 mins to cook. And we’re still a bit firm. And they were cut into small cubes. Other than that. It was very tasty. And healthy.

I just made this for lunch. Great taste. It was easier (for me) to put everything in a large bowl to mix with the oil/Maple syrup. With a large spoon! It took longer than 1/2 hour to roast the sweet potato, and I had cut it in fairly small pieces. But it is a very adaptable, and for me, a pantry staple recipe. You could substitute for squash, other greens and spices etc. I served it with brown rice, but Pita bread would be good too. I didn’t roast the greens because I happened to have some cooked beet greens.

This is so cool — and it has many of our favorite vegqn things in it. We find (after being ‘strict’ vegans and then vegetarians and then fishitarians over the years) that we like to eat 2 vegan dinners, 2 vegetarian dinners, 2 fish/seafood and 1 ‘meat’ dish a week. Maybe I just feel better about not having a ‘feel-good label’ for what I eat — or maybe I’m old and just love the variety!!! Whatever, I enjoy your recipies and thank you!

Being a heart attack patient I’ve changed my diet( to avoid the need for double bypass), what could substitute for the olive oil? Maybe applesauce or cut it to a maximum of 1tsp oil oil
Yes, I try to avoid oils as well for those same reasons. I just looked up what else to use. They said chickpea oil, which has a key base to it, and it appears to the vegetable as well thus making the spices work better. There are a couple of other options, but I like this option. A Google search could help you find a solution. Good luck with that. I’m excited about making it and now I know about chickpea liquid.

Delicious & super easy! After I cut up the sweet potato and onion and rinsed the chickpeas, I placed everything into a bowl. I found that it was easier to toss everything with the olive oil/maple syrup mixture in the bowl rather than doing it on the baking sheet. One more thing to wash, but I felt it was worth it.
can you recomend non-dairy substitute for yogurt?

You should be able to print it by going to Settings on your PC and selecting Print. I am on a desktop computer hooked up to the printer, so I don’t know how you would print anything from a phone or tablet if that’s what you are on.
My Android phone is set up to my printer. (Need to have Wi-Fi) I’m able to print everything
