Sheet Pan Vegetable Frittata

Looking for a healthy, high-protein meal that comes together in minutes? This sheet pan frittata is a great way to incorporate more vegetables into breakfast and is a perfect meal-prep option for busy weekdays, while using kitchen staples.

Ingredients4 servings

  • 8 large eggs
  • 3 tbsp black olives, sliced
  • 2 tbsp full fat unsweetened Greek yogurt
  • 1/2 cup sliced mushrooms
  • 1/4 cup quartered artichoke hearts, drained and roughly chopped
  • 1/4 cup feta, crumbled
  • 1 tbsp parsley, minced

Directions

Preheat oven to 375°F. Grease a rimmed half sheet pan and set aside. In a large bowl, vigorously whisk eggs and Greek yogurt.

Pour into greased sheet pan. Sprinkle with mushrooms, artichoke hearts, black olives, and feta crumble. Transfer to oven and bake 15-28 minutes, until eggs are set. Allow to cool for 5-10 minutes, then slice and garnish with fresh parsley.

Note: This recipe can be easily adapted by using different types of vegetables such as sun-dried tomatoes or kale.

    Very good recipe and so adaptable. Did a half recipe and substitute baby tomatoes for mushrooms and artichokes because I didn’t have time to go to store. Used the feta and olives to sprinkle on with some dry oregano and smoked paprika. Also substitute green onions for parsley at then end.

      You could use the following ratio for egg whites: 8 large eggs ≈ 2 cups (480 ml) liquid egg whites (or about 16 large egg whites).

      You could make it in muffin cups or even a small fry pan( start on stove slowly and finish under broiler. They keep well in fridge for a few days. You could freeze but so useful and easy why bother. You can also add anything you like my favourite is mushroom, and onion and broccoli,a grate of ginger,black pepper,a shake of turmeric and paprika all topped with fine Parmesan freshly grated

    Prefer non yogurt recipes. I have banned yogurt because of the way cows are treated to get the milk for the yogurt. Pregnancy milk is used so they keep impregnate cows and taking the baby away right away. Also keeping them in the same area with no exercise

    Appreciate the recipes but… If recipes don’t have nutritional values provided I have to pass on them. I’m not about to look up every ingredient and try to compile something to decide it its a healthy option. It would be a one time effort for you to provide this opposed to a significant “repetitive” effort for your readers.

      YUKA knows what is nutritional and what is not. Been using their APP for a long time. They would never put ingredients in a recipe if it wasnt nutritional and healthy. Most cooks know these ingredients because they’ve cooked and baked with them over the years. The ingredients in this recipe is well known for its nutritional value.

    I am going to try this with my Kite Hill unsweetened almond yogurt. I can’t have regular yogurt or Greek yogurt. I also can’t eat mushrooms or artichokes, so I’m going to substitute red bell peppers and spinach.

      For recipes like this that do not have calories and nutrition (protein, fats, carbs, sodium & sugars), I use the My Fitness Pal app (mobile and desktop versions). I simply look up all of the ingredients, add them together, then divide by servings. I find it very easy to use, and very accurate.

        You could use a non-dairy yogurt or milk, cream, or even sour cream! The recipe also works without it, if needed.
