Ingredients4 servings

  • 2 cups butternut squash, cubed
  • 8 oz smoked salmon
  • 4 slices sourdough bread, toasted
  • 1/2 cup hummus
  • 1 tbsp olive oil
  • 1 tsp maple syrup
  • ¼ tsp salt
  • ⅛ tsp or pinch of pepper
  • Garnish: fresh herbs (optional)

Directions

Preheat the oven to 400°F. Toss the butternut squash with ½ tbsp of oil, salt, and pepper. Roast in the oven for 20-25 minutes until golden and tender.

Spread the hummus evenly on each piece of toast, top with smoked salmon and roasted butternut squash. Garnish with fresh herbs.

Notes:

  • Feel free to add 2 eggs your way for more protein. 
  • You can also substitute butternut squash for sweet potatoes or carrots.
  • You can roast the butternut squash the night before to save time. Store in an airtight container in the fridge.

    When I make hummus I sometimes add some roasted sweet potato to the processor . Especially if I have some left over. This saves a step.
