For salad:

  • 1 can (14oz) white beans like cannelini or navy beans rinsed and drained
  • 1 can (14oz) artichoke hearts in brine or water, rinsed, drained and chopped
  • ¼ cup red onion, diced
  • 1 cup tomatoes, diced
  • 2 tbsp fresh herbs like parsley or cilantro, finely chopped

For dressing:

  • ¼ cup olive oil
  • 2 lemons, juiced
  • 2 cloves garlic, finely minced or grated
  • ⅛ tsp salt or more to taste

Directions:

In a large mixing bowl, gently toss the white beans, artichoke hearts, chopped red onion, tomatoes, and parsley until well combined.

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, and salt until well mixed and emulsified.

Pour the dressing over the salad mixture. Toss gently until all the ingredients are evenly coated with the dressing. Let the salad chill in the refrigerator for at least 30 minutes to allow the flavors to meld. Give it a quick toss before serving to redistribute the dressing and flavors. 

Notes:

  • If you like a bit of heat, add some diced jalapeno pepper or red pepper flakes to the dressing.
  • This salad is great for meal prep and can be made the night before. Pour the salad into mason jars and take on-the-go.

    Thank you for all of the useful information you send! Do you suppose some day, a calculator could be devised so we can enter ingredients with amounts to get an overall score?
    I am thrilled with your app and cannot count the times I’ve been busily scanning bar codes to help with buying decisions as other customers approach to see what I’m doing. Sometimes they ask me to scan a product for them. Sometimes they already have the app which always leads to conversation about how great it is.     I read your recommendations. Write them down , do small changes ( I am single and don’t have all the ingredients and if I buy them they will spoil ).
