For salad:
- 1 can (14oz) white beans like cannelini or navy beans rinsed and drained
- 1 can (14oz) artichoke hearts in brine or water, rinsed, drained and chopped
- ¼ cup red onion, diced
- 1 cup tomatoes, diced
- 2 tbsp fresh herbs like parsley or cilantro, finely chopped
For dressing:
- ¼ cup olive oil
- 2 lemons, juiced
- 2 cloves garlic, finely minced or grated
- ⅛ tsp salt or more to taste
Directions:

In a large mixing bowl, gently toss the white beans, artichoke hearts, chopped red onion, tomatoes, and parsley until well combined.

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, and salt until well mixed and emulsified.

Pour the dressing over the salad mixture. Toss gently until all the ingredients are evenly coated with the dressing. Let the salad chill in the refrigerator for at least 30 minutes to allow the flavors to meld. Give it a quick toss before serving to redistribute the dressing and flavors.

Can you use something other than lemon juice with the oil?
I’d use a red wine vinegar in place of lemon juice. It pairs well with all the ingredients.

What can you use instead of artichokes?
With the ingredients listed I’d try fresh celery or canned hearts of palm.
