Zesty Mediterranean Quinoa Stir Fry

Bring the vibrant flavors of the Mediterranean to your table with this quick and delicious Zesty Mediterranean Quinoa Stir-Fry. This healthy dish is packed with protein-rich quinoa and chickpeas, juicy cherry tomatoes, fresh spinach, and tangy olives, all tossed in a zesty lemon mustard dressing 🍋 It’s the perfect meal for busy weeknights, light lunches, or meal prepping. Top with crumbled feta and fresh herbs for an extra burst of flavor!

Ingredients4 Servings

  • 1 cup quinoa, rinsed
  • 2 cups low-sodium vegetable broth
  • 1 lemon, juiced
  • 1/4 cup red onion or shallot, finely chopped
  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 heaping handful baby spinach
  • 1/2 cup olives, sliced
  • 3 TBSP olive oil (divided)
  • 1 tsp Dijon mustard 
  • Garnish: feta cheese, chopped mint or parsley

Directions:

In a medium pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat. Cover the pot, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed.

In a small bowl, whisk together 2 TBSP of olive oil, mustard, lemon juice and salt. Set aside.

In a large skillet, heat the remaining 1 TBSP of olive oil over medium heat. Add the red onion and cook until softened for about 1 minute. Add the quinoa, chickpeas, cherry tomatoes, baby spinach, and olives, stirring occasionally until spinach is wilted and chickpeas are heated, about 3-5 minutes.

Turn off the heat. Drizzle the lemon sauce over the mixture, and stir to coat evenly. Garnish with feta cheese and chopped herbs, then serve warm.

Notes:

You can also use another grain such as brown rice in place of the quinoa.
