And there’s no added sugar needed: dates and dried apricots naturally sweeten the brownie, while walnuts, cocoa, and peanut butter add fiber, minerals, and healthy fats.

- 1⅓ cups walnuts (about 5.3 oz / 150 g)
- 12 dried apricots — if needed, soak in hot water for a few minutes beforehand
- 8 pitted dates — if needed, soak in hot water for a few minutes beforehand
- 3 tablespoons unsweetened cocoa powder (about 0.9 oz / 25 g)
- 1 teaspoon vanilla extract
- 3 tablespoons creamy peanut butter
- 2 tablespoons dark chocolate chips, 70% cacao (about 1 oz / 30 g)
Directions

Add the walnuts to a food processor and blend until finely ground, with a texture similar to coarse flour.

Add the pitted dates, dried apricots, cocoa powder, and vanilla extract. Blend again until you have a thick, sticky dough.

Line a small 5½ × 8-inch baking pan with parchment paper. Transfer the mixture to the pan and press it down firmly and evenly using the back of a spoon.

Spread the peanut butter evenly over the top of the brownie.

Sprinkle with the dark chocolate chips, then refrigerate for 30 minutes before serving.
