
This Mexican-inspired tofu bowl is a simple, balanced meal packed with plant-based protein, fiber, and healthy fats. Made with marinated tofu, rice, avocado, fresh vegetables, and lime, it’s a fresh and flavorful dish that’s perfect for lunch or dinner.
Ingredients4 servings
- 1 cup uncooked white or brown rice
- 10.5 oz extra-firm tofu
- 2 medium tomatoes
- 1 avocado
- 1 cup canned corn, drained
- 1 lime
- 1 small bunch fresh cilantro, washed and dried
- 3-4 Tbsp extra-virgin olive oil
- 1 tsp ground cumin
- 1 tsp paprika
Directions

Cut the tofu into cubes and marinate it for 30 minutes with 2–3 tablespoons of olive oil, the cumin, paprika, salt, and pepper. Refrigerate while it marinates.

Cook the rice in a large pot of salted boiling water according to the package directions. Drain and set aside.

Cook the marinated tofu cubes in a skillet with a drizzle of olive oil for a few minutes, until golden brown.

Wash and cut the tomatoes into large cubes. Slice the avocado and drizzle it with lime juice to prevent browning. Drain the corn.

Divide the rice among serving bowls, then add the tofu, tomatoes, avocado, and corn. Sprinkle with chopped cilantro and serve with a drizzle of olive oil and lime juice. Season with salt and pepper to taste.
